OREO New York Classic Cheesecake

Ingredients

  • 131g OREO Double Stuff New York Cheesecake flavour cookies
  • 2 tbsp melted butter
  • 500g PHILADELPHIA Cream Cheese, softened
  • ¾ cup caster sugar
  • ¾ cup sour cream
  • 3 eggs
  • ¼ cup lemon juice
  • 2 tbsp cornflour
  • 1 ½ cup thickened cream, whipped

Preparation

  1. Preheat oven to 140C fan forced.
  2. Place OREO cookies in a food processor and crush to fine crumbs. Add melted butter and process until combined.
  3. Press into base of a 20cm spring form cake tin that has been lined with baking paper.
  4. Beat cream cheese in a stand mixer until smooth. Add sugar, sour cream, eggs, lemon juice and cornflour. Beat well.
  5. Pour into prepared pan. Bake for 60 minutes, then turn off oven and allow cake to cool in oven.
  6. Decorate with whipped cream and extra OREO Cookies, if desired.
